Admission: I hate quiche. And yet I could eat this one all day long.

SHARYN’S SPINACH QUICHE (makes 2)

What you need:

2 deep-dish frozen pie crusts

1 package Stouffers’ spinach souffle, defrosted

1 cup heavy cream

1 lb Swiss cheese, grated

1 can french fried onion rings, mashed

4 eggs

What you do:

1. Poke holes in pie crusts with fork

2. Pour 1/2 the mashed onion rings into each pie shell, then top with 1/2 of the spinach souffle in each.

3. Whisk together the eggs and heavy cream, and then stir in the cheese. Pour half of the mixture into each pie shell.

4. Bake the quiches 30-40 minutes (or until golden brown) at 325F.
