44 1/2 Chop Salad (check out the video here)

What you need: 

A mix of fresh greens (we used Boston lettuce and radicchio)

Grilled and diced red and yellow peppers (just set them on an open flame on the stove, turning them occasionally until they turn black, and then run them under ice water to remove the skin)

Chickpeas

Diced avocado

Diced hearts of palm

Diced hothouse cucumber

Halved red and yellow cherry tomatoes

Feta cheese (this can be taken out to make the salad vegan)

What you do: 

It’s extremely difficult. Combine all ingredients in bowl and toss with olive oil, balsamic vinegar, sea salt & fresh ground pepper. 

Tip: Dice all of the vegetables so that they’re a uniform size; this achieves the desired look.

Tip: You can play around a lot with this salad; try adding diced chicken or salami for an interesting twist. I think a squeeze of lemon would be a nice finishing touch, as well.
