“Homemade” Ice Cream Sandwiches

A last-minute, couldn’t-be-easier, everybody-will-love-them dessert solution for your Fourth of July festivities:

“Homemade” (but totally not really) Ice Cream Sandwiches.

Just bake up a batch of Tollhouse cookies, adding some chopped walnuts and/or shredded coconut to the recipe on the back of the bag. Make sure to cook them until they’re crispy (I add a minute to the maximum cooking time specified by the recipe).

Let the cookies cool, then sandwich a couple of heaping tablespoons of cookies ‘n’ cream ice cream between them, and roll the edges gently in rainbow sprinkles, chopped nuts, or shredded coconut.

Wrap each sandwich in Saran Wrap and freeze for at least an hour before serving.
