Breakfast Burritos

The Sunday brunch I whipped up for everyone is inexpensive, super-easy, and can be tailored to each person’s tastes.


Chop up some Black Forest ham into cubes and saute in a small skillet with a touch of olive oil until crispy. Meanwhile, heat a healthy dollop of butter in a large skillet until foaming. Scramble together 2-3 eggs per person with some milk, and add shredded cheddar cheese for the last 30 seconds or so of cooking, until it’s all stringy and delicious-looking.

Heat tortilla wraps (either in the microwave for 20 seconds or by flipping them a few times – carefully – over a burner set on low), and pile in salsa, sliced avocado, the egg/cheese mixture, and ham cubes (crumbled bacon also works). Hot sauce optional. Wrap it all up, cut in half, and serve with fruit.
